<p><strong>FIXINGS</strong></p>
<p>When it comes to salads, fixings do spell the difference between a healthy meal and a calorie-laden meal.  If you add the wrong kind of fixings and pile them on, you might as well eat a big cheeseburger with fries.</p>
<p>Croutons, bacon, meat, fried chicken strips, wonton strips as well as mayonnaise-rich salads such as coleslaw are definitely going to add unnecessary calories into your meal.  So, it is best to avoid them.</p>
<p>To have a healthy and low-calorie salad, always choose a good variety of colorful vegetables, fruits, beans as well as mixed greens.  Dark, leafy greens such as spinach, arugula, and fresh herbs often have more nutritional value.  It is said that the darker the leaf, the more nutrients it provides. Remember that food items such as avocados, cheese, nuts, olives, dried fruits are all high-calorie items and should be taken in controlled portions.</p>
<p><strong>SALAD DRESSINGS</strong></p>
<p>Salad dressings are also a critical ingredient to creating your low-fat salads.  Too much of the wrong salad dressing can trick you into eating a high-calorie meal without you knowing it.</p>
<p>A light vinaigrette or salsa as well as balsamic vinegar or any other flavorful vinegar together with a olive oil can help you create a low-calorie salad.  You can get away with a creamy dressing by using just a small portion of the dressing or by diluting the dressing with a little water.</p>
<p>When dining out, always opt to order the salad dressing on the side and use only a portion of it.  Remember that dressings do add calories to your meal.</p>

<p><strong>FRUITS AND VEGETABLES</strong></p>
<p>It is recommended that you consume at least two servings of fruit and three servings of vegetable each day.  One serving of fruit is equal to one medium size of fruit or half a cup of cubed fruit or berries.  One serving of vegetable is equal to half cup cooked vegetable or 1 cup of raw vegetable.</p>
<p>Different colors of fruits and vegetables provide different nutrients so it is important that you include a wide variety of colors into your diet.</p>
<ul>
<li>Blue and Purple fruits and vegetables such as eggplants, blueberries and blackberries can help you maintain a lower risk of some cancers, memory function, healthy aging and urinary tract health.</li>
<li>Green fruits and vegetables such as broccoli, peas, celery, cabbage, limes, pears and kiwi can help you maintain a lower risk of some cancers, vision health as well as strong bones and teeth</li>
<li>White fruits and vegetables such as cauliflowers, garlic, mushrooms, onions, white corn, bananas or white peaches can help maintain heart health, cholesterol levels that are healthy, and a lower risk of some cancers.</li>
<li>Yellow and orange fruits and vegetables such as carrots, yellow squash, pumpkins, sweet potatoes, apricots, mangoes, pineapples, lemons or oranges can help maintain a healthy immune system as well as heart health, vision health and a lower risk of some cancers.</li>
<li>Red fruits and vegetables such as beets, radishes, tomatoes, apples, strawberries, raspberries, cherries and watermelons can help maintain heart health, memory function, urinary tract health as well as a lower risk of some cancers.</li>
</ul>
<p>When choosing what to eat, opt for fresh, frozen or canned fruits or vegetables without added fat or sauce.   At this point, you may already add all vegetables back into your diet.  Even those that contain high levels of carbohydrates such as corn, peas and potatoes.  Keep in mind that all vegetables are healthy.  They provide fiber to help fill you up, are low in calories and are packed with the needed vitamins and minerals.</p>
<p><strong>FATS AND OTHER FOODS</strong></p>
<p>Here&#8217;s a quick guide for consuming fats -</p>
<ul>
<li>choose more monounsaturated fats</li>
<li>moderate amounts of polyunsaturated fat</li>
<li>less saturated fats for improved heart health.</li>
</ul>
<p>When choosing what to eat,</p>
<ul>
<li>Opt for margarine that is free of Trans fats instead of butter.</li>
<li>Opt for oils that are high in Omega-3 such as canola and soybean oil instead of palm, palm kernel or coconut oil.</li>
<li>Opt for other oils such as peanut oil or olive oil instead of solid shortening.</li>
<li>Choose small amounts of nuts and seeds instead of chocolate and high-calorie desserts.</li>
<li>Choose calorie-free beverages instead of sugary drinks.</li>
</ul>
<p>An example of one serving of monounsaturated fat would be:</p>
<ul>
<li> 1 tsp olive or canola oil</li>
<li>8 large black olives</li>
<li>10 large pimento-stuffed green olives</li>
<li>1/2 Tbsp peanut butter</li>
<li>6 almonds or mixed nuts</li>
<li>10 peanuts</li>
<li>1 Tbsp sesame seeds</li>
<li>1/8 avocado</li>
</ul>
<p>An example of one serving of polyunsaturated fat would be</p>
<ul>
<li> 2 Tbsp low-fat dressing</li>
<li>1 tsp mayo</li>
<li>1 Tbsp reduced-fat mayo</li>
<li>2 walnuts</li>
<li>2 tsp Miracle Whip salad dressing</li>
<li>1 Tbsp reduced-fat Miracle Whip</li>

<li>1 tsp trans-fat free margarine</li>

You will now be able to eat foods such as fruits, low-fat dairy products, whole grains, and higher carbohydrate vegetables.</p>
<p>Below are some helpful guidelines in selecting the kind of foods to eat during the Transition phase:</p>
<p><strong>GRAINS</strong></p>
<p>It is recommended that you select foods with Whole Oats, Whole Rye or Whole Wheat.  These ingredients should be the first one listed on the label&#8217;s ingredients list.  Bread that has at least 2 grams of fiber in each slice is also recommended.   Be wary of foods labeled Multi-grain, Stone Ground, 100% Wheat or Bran as these are usually not whole grain products.   As a general rule, it is best to choose foods with fewer added sugars, fats, or oils.</p>
<p>When choosing what to eat,</p>
<ul>
<li>Opt to have Whole Grain Bread instead of Refined White Bread.</li>
<li>Choose Brown Rice instead of White Rice.</li>
<li>Choose Whole Wheat Pasta instead of Refined Flour Pasta.</li>
<li>Choose Whole Wheat Flour instead of Refined Flour.</li>
<li>Choose Whole-grain breakfast cereal instead of sugary breakfast cereal</li>
</ul>
<p>Here are some examples of one serving of grain food:</p>
<ul>
<li> 1 cup of unsweetened cereal</li>
<li>1/2 cup cooked cereal</li>
<li>1/3 cup cooked brown rice</li>
<li>1/2 cup cooked whole wheat pasta</li>
<li>1 slice whole grain bread</li>
</ul>
<p><strong>DAIRY</strong></p>
<p>When eating dairy, opt for fat-free or low-fat milk, cheese and yogurt.   Cheese may occasionally be used as a substitute for Lean Meat.  Keep in mind that sweetened milk products contain added sugars which increases your calorie intake.  So, it would be wise to avoid them when you can.  Try to choose sugar-free foods when you can.</p>
<p>When choosing what to eat,</p>
<ul>
<li>Choose either skim or 1% milk instead of 2% milk or whole milk</li>
<li>Choose either fat-free or low-fat yogurt instead of whole-milk yogurt</li>
</ul>
<p>Here are some examples of one serving of dairy food:</p>
<ul>
<li>1 cup milk (skim or 1% low fat)</li>
<li>1 cup soy milk, low fat or fat free</li>
<li>1 cup low fat or fat free buttermilk</li>
<li>1/2 cup evaporated fat free milk</li>
<li>1 cup fat free non-nutritive sweetened and/or fructose sweetened yogurt</li>
<li>1/2 cup nonfat or low-fat plain yogurt</li>
<li>1 cup 2% milk</li>
<li>1 cup soy milk</li>
</ul>
<p><strong>MEAT</strong></p>
<p>When shopping for meat, always choose lean cuts of beef and pork such as loin and round cuts.  Choose fresh cuts of meats when possible instead of processed meats as processed meats contain added sodium.  Examples of processed meat include ham and sausage deli meats.</p>
<p>When buying some poultry, opt for skinless poultry.  Keep in mind that boneless, skinless chicken breasts and turkey cutlets are the leanest poultry choices.  It is also advised to eat at least one serving of fish rich in Omega-3 fatty acids each week.  Examples of these are salmon, albacore, tuna, mackarel, trout or herring.</p>
<p>Should you want to consume meat substitutes, you may also choose meat substitutes made with soybeans or textured vegetable protein, legume-type beans, egg whites, egg substitutes or low fat cheeses.  It is not advisable to use liver and other organ meats as these are high in cholesterol.  If you must do so, use them sparingly.</p>
<p>When choosing what to eat,</p>
<ul>
<li>Choose boneless, skinless chicken breast instead of chicken thighs with skin</li>
<li>Choose lean ground beef (85-99% lean) instead of regular ground beef (70-80% lean)</li>
<li>Choose grilled, baked, or broiled meats instead of deep-fried meats.</li>
</ul>
<p>Here are some examples of one serving of lean meat (4-6 ounces of cooked weight of any lean meat or meat substitute):</p>
<ul>
<li>skinless chicken or turkey (white meat preferred)</li>
<li>white fish (fresh or frozen cod, flounder, haddock, halibut, trout), tuna (fresh or canned in water), smoked salmon, salmon (fresh or canned)</li>
<li>shellfish (clams, crabs, lobster, scallops, shrimp, imitation shellfish)</li>
<li>duck, venison, buffalo, or ostrich</li>
<li>egg whites or an egg substiture</li>
<li>low-fat or fat-free cottage cheese</li>
<li>fat-free cheese</li>
<li>processed sandwich meats with one gram of fat or less per ounce (such as deli thin meats) including turkey, roast beef and ham</li>
<li>USDA Select or Choice grades of lean beef trimmed of fat such as round, sirloin, and flank steak, tenderloin, roast (rib chuck, rump); steak (T-bone, porterhouse); ground round</li>
<li>lamb: roast, chop or leg</li>
<li>veal:  lean chop, roast</li>
<li>1/2 cup beans or lentils (cooked)</li>

<p>To have an effective weight loss diet, choose foods which contain a lot of nutrients in their calories.  Do not base your diet around any single ingredient.  When trying to lose weight, it is recommended that you eat a healthy variety of foods to make sure that you get all the essential nutrients that you require.</p>
<p>Below is a list of foods that will help you lose weight:</p>
<p><strong>1. Bread (Whole Grain)</strong></p>
<p>While other sources may claim that avoid carbs are the best diet strategy, unfortunately, this is not true.  The truth is, staying away from carbs could be dangerous to your health.  What you actually need to do is to reduce your carbs intake to a healthy portion.  Most doctors would agree that this would fall within 50% to 60% of your total daily calorie intake.  This means that if you are on a diet of 1,000 calories per day, then 500 to 600 calories should be from grains, fruits and vegetables.</p>
<p>Whole grain breads include a lot of nutritional value.  If you substitute two slices of white toast with a half cup of oatmeal or whole grain cereal, you will be getting three times the vitamins, amino acids and fiber that your body requires for the same amount of calories.  And because you have given your body something to work on that will take some time to digest, you will feel full longer too.  Thus, helping you avoid taking in that extra chocolate chip cookie in between meals.  This is probably the reason why the Bible refers to bread as &#8216;the staff of life.&#8217;</p>
<p><strong>2. Fish</strong></p>
<p>Major medical associations recommend that we consume at least three servings of fish per week.  Fish is good because it is low in fat and high in protein just like red meat.  Moreover, fish provides Omega 3 fatty acids which most proteins do not provide.</p>

<p>Each serving gives you vitamin C, vitamin K, folic acid, manganese, magnesium, beta-carotene, protein and lutein (a potent anti-oxidant). <p><strong>4. Olive Oil</strong></p>

This will give your body sufficient energy.</p>
<p>Also know that a little fat is needed by the body to process and consume vitamins.  Such being the case, olive oil, which is a mono-unsaturated fat, would be your best option.</p>
<p><strong>5. Pink Grapefruit</strong></p>
<p>Aside from being tasty, grapefruits also provide you with a lot of the nutrients you need.  A half grapefruit only contains 40 calories and it provides you with 45 mg of vitamin C, lycopene, pectin, beta-carotene and potassium.  So, go ahead.  Eat it for breakfast or toss it into a salad with spinach for an extra nutritional value.</p>
