This can be hard if you don&#8217;t know where to begin. Today, we are going to make your day real easy and offer you a great Medifast recipe that you will want to continue making over and over.</p>

<h3><strong>Almost Fat Free Turkey Stroganoff</strong></h3>
<p><strong>Ingredients:</strong><br />
(Makes 2 servings)</p>
<ul>
<li>1 lb lean ground turkey, 99% fat free</li>
<li>2 teaspoons olive oil, divided</li>
<li>8 ounces mushrooms, cleaned and thinly sliced</li>
<li>4 ounces red onions, sliced</li>
<li>1 tablespoon garlic	 (finely chopped or minced)</li>
<li>2 tablespoons thyme, dried</li>
<li>1 teaspoon garlic powder</li>
<li>1 tablespoon black pepper</li>
<li>4 ounces fat free sour cream</li>
<li>1/4 cup water, as needed</li>
</ul>
<p><strong>Directions:</strong></p>
<ol>
<li>Clean and slice onion and mushrooms.</li>
<li>Drizzle 1 teaspoons of the olive oil into a non-stick pan and cook the onions over medium heat for a few minutes until they begin to soften,.</li>
<li>Drizzle the other half of the oil into the pan and add the mushrooms; cook on medium, turning and stirring frequently, for a few minutes until the mushrooms soften and begin to release their liquid.</li>
<li>(Optional Step: While the onion and mushrooms are cooking, put dried thyme, garlic powder, and black pepper in a mortar and pestle and grind to a fine consistency.).</li>
<li>Remove onion and mushrooms from pan and set aside. Put ground turkey into the same pan, breaking apart the chunks into &#8220;ground meat&#8221; consistency. Cook, stirring frequently, until little or no pink shows.</li>
<li>Return onion and mushrooms to pan, and add dried spices, cook on low heat, stirring often, until all the meat is done and the mushrooms and onions have released all their liquid and are beginning to caramelize.</li>
<li>Adjust seasoning, if needed, and add water if the mixture is sticking to the pan too much. Continue cooking until the meat and vegetable mixture is no longer &#8220;wet.&#8221;.</li>
<li>Using the spatula, loosen any stuck-on bits on the bottom of the pan, and add the sour cream, mixing well.</li>
<li>Serve immediately over zucchini ribbons, spaghetti squash, or your choice of starch.</li>

1. Dice the tomatoes<br />
2. Remove the cilantro leaves from their stems and finely chop them.<br />
3. Cut the lemon in half<br />
4. Remove the avocado flesh from its skin, place it in a bowl, add the other ingredients, and mash thoroughly with a fork.</p>

<p>2  medium sweet potatoes (about 1 pound total)<br />
1/2  teaspoon salt<br />
1/2  teaspoon ground cumin<br />
1/2  teaspoon chili powder<br />
1/2  teaspoon paprika<br />
1/4  teaspoon ground black pepper<br />
olive oil to coat</p>
<p><em>Directions:</em><br />
Preheat oven to 425°F. Lightly coat a 15x10x1-inch baking pan with olive oil or butter; set aside. Scrub potatoes and cut lengthwise into quarters. Cut each quarter lengthwise into four wedges. Arrange potatoes in a single layer in pan. Coat lightly with olive oil.</p>
<p>Combine salt, cumin, chili powder, paprika, and pepper in a small bowl; sprinkle over potatoes</p>
<p>Bake for 20 minutes or until brown and tender, turning once.</p>

<p><em>Ingredients:</em></p>
<p>2 tbsp extra virgin olive oil<br />
1 big garlic clove, halved<br />
1 onion, peeled and cut into small pieces<br />
1/2 tsp cumin<br />
1 pinch of cayenne pepper<br />
2 cups fresh or canned chickpeas, cleaned and drained (if using fresh chickpeas follow the instructions on the packet, as they need to be soaked and precooked first)<br />
8 cups baby spinach leaves, cleaned and drained<br />
Celtic sea salt or himalayan salt and pepper to season</p>
<p><em>Directions:</em></p>
<p>Heat the oil in a large frying pan. Add the garlic and sauté for about 2 minutes until the garlic halves turn slightly golden.  Add the onion, cumin, cayenne pepper and stir fry for about 5 minutes until soft. Add the chickpeas and stir in the spinach leaves. Cover and cook on low for about 3-5 minutes.</p>
<p>Season the dish and serve immediately.</p>
